Instant Pot Bacon Egg Bites
Todays blog post is a good one for you guys!! I have been eating these egg bites on repeat and I never get sick of them! They are the perfect consistency, so delicious and so satisfying. I know it sounds a little weird, but the cottage cheese in the egg bites is key, it’s makes the texture perfect and adds a good amount of protein. If you aren’t a fan of cottage cheese, I promise you wont even know it is there! These are not your average dry, over cooked egg bites. I love to make a double batch of these on Sunday and enjoy them for breakfast all week long. It is the best to have delicious eggs in the morning and not have to dirty a pan! 2 egg bites, a piece of sourdough toast, and fresh berries… mmmm… I am already thinking about tomorrow’s breakfast!
If you are a Starbucks eggs bite lover, you will absolutely love these!! I made mine with bacon, but you could totally change up the mix ins to whatever you’re feeling. Sometimes I just make them plain, with no bacon, and they are still delicious. These are naturally gluten free and can easily be made vegetarian, too! The best part is how easy they are to make! You just add eggs, cottage cheese, cheese, and spices into the blender, and blend it realllyyy well. And then cook in the instant pot for about 11 minutes. Done! You will need one of these silicone egg bite molds to make these. I also have this instant pot accessory kit which include the egg bite mold and lot’s of other fun accessories! If you have an instant pot that has been getting dusty in your pantry, this is your sign to bust it out. I promise you will love these!!
Instant Pot Bacon Egg Bites
Ingredients
- 2 strips bacon, cooked
- 5 large eggs
- 1/2 cup low fat cottage cheese (I like good culture)
- 1/2 cup shredded cheese, any kind
- 1/2 tsp salt
- 1/4 tsp garlic powder
- 1/4 tsp white pepper
Instructions
- Add eggs, cottage cheese, cheese, salt and spices into high powered blender. Blend on medium/high until very smooth, blend a little longer than you think!
- Dice bacon and distribute into egg molds
- Pour egg mixture into egg molds, until almost full. Place lid on egg mold.
- Add 1 cup of water to instant pot and place wire trivet and egg bite mold into instant pot
- Secure the instant pot lid with vent closed, and pressure cook for 11 minutes. When timer is done, turn the valve to release the pressure. Open the lid and with oven mits, remove the wire trivet and egg bites out of the instant pot. Allow to cool for about 10 minutes.
- Once cooled, run a butter knife around the edge of each egg bite. Then flip over and they should slide out on a plate.
- Enjoy!
Notes
- Store these in an air tight container in the fridge for up to 5 days
- Re-heat in microwave for ~45 seconds
