Cilantro Lime Vinaigrette
Does anyone else looove a good cilantro lime vinaigrette?!? Mmm a big salad with this dressing is one of my all time favs!! I swear I go to Cafe Rio and Costa Vida just for the salad dressing. So I decided it was time to make my own. Salad dressing is something I love to make because it’s easy, I can control what goes in it, and homemade always tastes soo much better than store bought. There’s not many store bought dressings that I love the flavor of, AND they are usually made with unhealthy oils and tons of sugar. Home made is the way to go for sure!!! We have fresh cilantro in our garden this year so this has been a go to this summer! And weirdly enough… I am one of those weirdos that doesn’t like cilantro. But I love a cilantro vinaigrette. Am I CRAZY?? I feel like the lime and vinegar take over and its just a fresh, tart, salad dressing. So, if you aren’t a cilantro lover like me, I think you should try this! Don’t let the name scare you :)
This comes together so easily and really takes your salad up a notch. I love to add this to a taco salad or a southwestern style bowl for that perfect punch of flavor. I love to make this on Sundays so I have it ready to go for the week and can make a delicious salad all week long for lunch! Think lettuce, black beans, tomatoes, avocados, chicken, cheese, and cilantro lime vinaigrette. Sooo good!! I hope you love this one as much as we do.
Cilantro Lime Vinaigrette
Ingredients
- 3/4 cup avocado or light olive oil
- 2 Tbsp red wine vinegar
- 3 Tbsp lime juice
- 1 cup cilantro, stems removed
- 2 cloves garlic, minced
- 1-2 tsp honey (optional)
- salt and pepper to taste
Instructions
- Add all ingredients to blender or food processor
- Blend until almost smoothe
Notes
- Store in the fridge for up to 5 days
