Oven Chicken Fajitas

If you haven’t noticed yet, my family LOVES Mexican food!! It’s just the best way to get protein in that’s packed with flavor in my opinion. And these oven skillet fajitas are definitely a fan favorite!!

This recipe marks all the checkboxes, easy, quick, and soo yummy! It requires a little chopping up front, slicing the peppers, onions, and chicken. But this can be done ahead of time if needed, and then it really comes together soo quickly! I like to chop my chicken and vegetables on my lunch break or in the afternoon before I pick the kids up from school. Then I just add everything to the skillet and toss it in the oven. Love a good hands free dinner!! This has become a meal my kids request most weeks and it is perfect on the busy evenings filled with activities!

Our favorite way to enjoy these is to make tacos, using siete almond flour tortillas and alll the delicious fixings. Load it up with cheese, avocado, sour cream, pico de gallo, lettuce and hot sauce!! YUMMM!

The most flavorful skillet oven chicken fajitas!!

Ingredients

  • 1 lb chicken breast, sliced into strips
  • 1 white onion, sliced
  • 1 red bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 tsp chili powder
  • 2 tsp paprika
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper
  • 3 Tbsp avocado oil or melted butter
  • 1/2 of a lime, juice of

Instructions

  1. Preheat oven to 400° F
  2. Slice your chicken and veggies and place in cast iron skillet
  3. Mix all spices and salt together in a small bowl
  4. Sprinkle spice mix and avocado oil over chicken and veggies, mix together
  5. Bake for 30-35 minutes
  6. Top with lime juice and serve as desired! Tacos, burrito bowls, salad, you name it!
