Green Monster Muffins
Mmm Green Monster Muffins are so yummy! The whole family loves them and one batch doesn’t often last more than a day or two in our house. To be honest, we make these muffins year round but around Halloween, we call them monster muffins! Something about that makes the kids love them even more. These muffins are perfect for a quick breakfast, to dessert and everything in between!
I love that these muffins are filled with ingredients we almost always have on hand, so I can whip them up anytime. Whenever we have bananas that are a little too brown, this is what we make! And on that note, the ingredients are wholesome and healthy, so I have zero guilt letting my kids have these anytime they want. Especially around this time of year, when the sweets seem to be never ending!
And for the best part, they are SO easy to make! You simply add all of the ingredients except the flour and chocolate and blend it up until smooth. Then stir in the flour and chocolate, pour into your muffin tin, and bake! It does not get easier than that!! I absolutely love my vitamix, but any blender, or even food processor, will work.
You will bake these muffins for ~20 minutes at 375°, and then allow to cool before digging in.
Green Monster Muffins
Ingredients
- 2 ripe bananas
- 3/4 cup milk or milk alternative
- 1/3 cup maple syrup
- 1 cup oats
- 2 cups spinach
- 2 eggs
- 2 Tbsp. avocado oil (melter butter or coconut oil work well, too)
- 1 tsp vanilla
- 1 tsp baking soda
- 1/8 tsp salt
- 1/4 tsp cinnamon
- 1 cup whole wheat flour
- 1/2 cup chocolate chips, plus more for topping
Instructions
- Pre-heat oven to 375°
- Add all of your ingredients except for the flour and chocolate chips into the blender and blend until smooth.
- Add flour and chocolate chips and mix with a spoon.
- Pour batter into silicone baking cups or a greased muffin tin. Top with mini chocolate chips, if desired.
- Bake for ~20 min or until a toothpick comes clean.
